Clara Kapelembe Bwali popularly known by her business name ‘Black Garlic’ is a food stylist, food photographer and recipe author. She holds a degree and post graduate degree in Computer and Information Sciences from Monash University. For her work, she has been featured internationally across the continent and America on Black Foodie, Dine Diaspora, Food Blogger Pro, Food for Mzanzi, Food 24, My Cookery zone, and My Burnt Orange. Clara recently featured in Afternoon Express on SABC representing Zambian cuisine during Africa Month and the expresso show on SABC 3. She was selected as one of the African food influencers for the Every Plate Counts challenge by UNEP, WWF, FAO, and the Future Food Institute. Locally she has collaborated with a number of chefs as well as one of Zambia’s most celebrated foodie couples, The Woods of the Wood Kitchen on several projects.
Chicken Wings
Ingredients -1 kg Chicken wings -1tsp Paprika – Salt and pepper -2 tablespoons cornstarch – 1 tsp Garlic Powder
Sauce Ingredients: – 2 tablespoons Butter – 2 tablespoons Barbecue sauce – 1 tsp Chillies (store-bought) – ¼ cup Chives/spring onion leaves
Method: In a clean bowl, add wings, paprika, salt and pepper, cornstarch, and garlic powder. Mix well. Deep fry until the wings are nice and golden brown. Sauce Method: Over medium heat, melt butter. Add BBQ sauce and chillies. Boil for 5 minutes. Add spring onion leaves. Add chicken wings, simmer for 2 minutes. Serve hot with fries and coleslaw
Smoked Ribs and Chips
Ingredients: – 1 kg Smoked pork ribs – 2 tablespoons lemon juice – ¼ cup Barbecue sauce -1 tsp Sesame seeds – 1 tablespoon oil – salt and pepper – mixed herb
Method: In a clean bowl mix lemon juice, barbecue sauce, mixed herb,sesame seeds and oil. Add salt and pepper to taste. Mix well. Generously coat your ribs and marinate overnight if possible. Grill while occasionally brushing leftover marinade. Serve with chips and a green salad
